The rooftop fan is out of sight — and often out of mind. But when it’s neglected, grease buildup there can ignite the whole building.

The rooftop fan is one of the most critical — and most neglected — parts of the exhaust system. If your cleaner doesn’t climb up there, you may have pounds of grease sitting on your roof.

Ask your cleaners: Did they clean the fan blades? Is the grease containment system functional? Did they note any leaks? If the answers aren’t in the after-service report, you may already have a fire risk above your dining room.
